I love cooking and making food taste great. Since I have a blog, why not share some of my recipes. The way I tend to cook is to throw different things in, most likely spices, but rest assured it tastes great.
So the other day I made a chicken and rice dish. It’s simple and easy to make.
- Chicken cut into small chunks
- Brown Rice or white rice
- Tin of chopped tomatoes or similar (plum tomatoes/ tomato sauce etc)
- Garlic clove (optional)
- Spices: Smoked Paprika, Schwartz spices; Cajun, Season-All, and Classic BBQ (all optional)
Measure out the brown rice and add to boiling water. Leave to cook. It’s probably best to set a timer to keep the time and remember to stir often.
Heat a pan (or frying pan) and add a tsp of oil and a crushed garlic clove. Stir the garlic around to make sure it isn’t clumped together. I left it for less than a minute to heat up before I added the chicken.
Put the cut up chicken in a bowl with some olive oil and pour some of each of the spices on top. Mix it all together so each piece of chicken is evenly coated.
Add it to the pan (with oil and garlic) and stir. It will take a few minutes but when each piece is cooked add the tomato sauce, stir and leave to cook for around five minutes.

Put the gas on low and wait for the rice to finish cooking. And it’s done.
